Bacon, arugula,

TABASCO® -Chipotle breakfast sandwich

Yield: 4 sandwiches


Ingredients:       

  • 7 Large eggs (or 1-3/4 cup egg whites)
  • Salt and pepper to taste
  • 2 Tomatoes, sliced
  • 5 tbsp TABASCO® Brand Chipotle Pepper Sauce
  • 2 tbsp Olive oil
  • 8 slices Sourdough bread, toast
  • 12 slices Turkey bacon, cooked
  • 12 leaves/sprigs Arugula leaves or watercress sprigs, coarse stems discarded

Method:

1.        Whisk together eggs and season with salt and pepper.
       
2.        Marinate tomato slices in TABASCO® Brand Chipotle Pepper Sauce.
       
3.        Heat olive oil in skillet, then cook egg mixture, stirring slowly, until just cooked through.
       
4.        Make sandwiches with toasts, scrambled eggs, bacon and arugula.
