Today's restaurant marketing tip: Sell your menuSampling is a very effective strategy for today's foodservice operator. Traditionally used as a tool by kiosk operators to reduce trial risk and entice customers to their stores, sampling can now play a more sophisticated role.

Providing samples of current menu items to guests waiting to be seated can reduce the chance of them leaving to avoid the wait and keep them busy by creating the perception that the wait passes more quickly. Samples may also encourage guests to try items that they may not otherwise have ordered.

As part of the menu development process, providing guests with samples of new items that are being considered for the next menu will allow management to collect direct feedback about the proposed items. Chefs can avoid new items that do not receive a favourable response and fine tune items based on guest comments that will increase their likelihood of being positively received once on the menu. Engaging customers directly through sampling is a low cost approach to increasing interest and sales.
